Kesar Peda



Ingredients:

1 liter - milk Or 200 g - mawa (khoya)
100 g - sugar
� tsp - cardamom powder
few strands of saffron
a pinch of nutmeg powder (optional)

Method
  1. Boil the milk and start stirring from the very beginning to make thick mawa.
  2. When the mawa thickens add sugar.
  3. When the sugar is added the mawa will slightly loosen. Hence heat on a low flame.
  4. When sufficiently thick add cardamom powder, nutmeg powder and paste of saffron.
  5. Mix well and allow it to cool down.
  6. Knead (rub) the mawa well.
  7. Form pedas.

To Make Saffron Paste:

  1. Soak a few strands of saffron in a tbsp. of water or milk for about 5 minutes.
  2. Grind with a metal or stone pestle.
  3. If milk is used for preparing the paste then it has to be used up and cannot be kept for later use.

Note:
For preparing peda from readymade mawa, add sugar in mawa and follow the same steps as above.
